Fluffy and soft apple cinnamon pancakes that are healthy, packed with oats and mixed in a blender. Serve it with maple syrup and butter. The easiest and healthiest fall breakfast recipe.
This recipe is simple to make and all you need it is a blender. They are fluffy, healthy super delicious and naturally sweet made with apples. If you need a quick breakfast recipe then this is the one for you. The beauty about this recipe is that you can make a large batch and store them in the fridge for 3-4 days or in the freezer for 2 weeks. So you can have pancakes on repeat every morning. Also we use a the whole apple, no peeling here.
You don’t need much to make these pancakes, most of the ingredients you would already have in sitting in your kitchen. I would recommend using cinnamon as apples and cinnamon are a match made in heaven. The oat flour makes them fluffy but also adds fibre to your pancakes. The eggs bind the pancake batter together, you can serve them as you like but I love them with maple syrup, butter and more cinnamon on top.
Apples and cinnamon are a great combination, add them to a pancake and you’ve got one of the tastiest pancakes ever. They are healthy as they do not have any refined sugar or flour, instead we use oat flour and the apples sweeten the batter naturally. These are deliciously perfect for a fall breakfast.
To make these pancakes we need oats, apple, eggs, baking powder, salt, cinnamon powder.
I have used rolled oats which are blended into a powder before adding the remaining ingredients and blending until smooth.
I have used a red honey crisp apple with the skin. The apple needs to be cooked in the microwave for 2-3 minutes until soft. I have not tried it with green apples but they tend to be more tart so I would suggest using a red apple instead. Now I like to add a tiny amount of baking soda and lemon juice to make them extra fluffy but you don’t NEED it in this recipe as it works well without it too.
We need a blender for the pancake batter. I would also suggest a microwave for the apples but if you don’t have one you can cook them over the stove on low to medium heat covered for 5-8 minutes or until soft and mushy. The pancakes are cooked on a non stick sauté pan, we need a slotted spatula to flip them. I have cut the butter into stars to make it a little interesting using a small star cookie cutter but this is completely me being extra.
Cut the apple in to small cubes and place in a bowl, transfer to the microwave and cook for 2-3 minutes on until soft and mushy. In a blender add the oats and blend until smooth. Add the eggs, baking powder, cinnamon, salt and mushy apples, blend together until smooth. Allow the batter to sit for a couple of minutes while you heat up a sauté pan on medium heat. The pancake batter will feel thicker, pour 1/4th cup of pancake batter into the pan and cook for 1-2 minutes or until you see bubbles rise to the surface, flip the pancake and cook for 1-2 minutes on the other side. Transfer to a plate and serve with maple syrup, butter and more cinnamon.
They are best served warm with maple syrup or honey, more cinnamon powder and salted butter. You could serve it with more fresh fruit like blueberries or chopped plums. If you are feeling indulgent add chocolate chips. As it is a breakfast recipe pair it with tea, coffee or fresh juice. I have added peanut butter and honey to make this pancake even more yummy. The leftovers can be stored in zip lock bags in the fridge for 3-4 days and in the freezer for 2 weeks. When ready to eat, remove from the bags and microwave for 30 seconds or until warmed through.
