Pineapple Basil Summer Soda

Summer sodas are the best way to make a quick and east refreshing drink that is basically fresh fruit puree topped with soda. This pineapple basil puree is perfect for summer.

This recipe is simple and can be made in no time. It is the best Mocktail recipe to make when you have kids or friends coming over and need a quick drink. I have used pineapple and basil to make this summer soda but you can make it with any fruit of your choice. 

The best part of this is, you can store the puree in a glass jar for a week or so. Or better yet, freeze the puree in an ice cube tray and use when you please. Ideally fresh fruit works best here. If you don’t have fresh then frozen fruit will work but do not use any fruit jam or compote. It must be whole fruit.

The recipe isn’t demanding as you need a blender to bring it together. Once you have blended the pineapple, basil, agave and lemon juice, get a short glass, add a little of the puree and a few ice cubes. Stir around and pour over the soda. I like using club soda or sparkling water but kombucha is a a good option as well. You can use 7up or Limca too. I served this soda in a salad dressing jar, embarrassingly true, they are fantastic and versatile. Check out the link on Amazon to buy them. 

Food Pairing –

This is a summer drink so make sure to pair it with sandwiches, salads, burgers, and cheeseboards. As for desserts you can serve with the Lemon Blueberry Loaf Cake, Pannacotta or even the short cake recipe. It would be delicious with the Kale Quiche too.

Pineapple Basil Summer Soda

Equipment

  • Blender
  • Short glasses
  • Spoon

Ingredients
  

  • 1/2 cup Pineapple chunks
  • 1/4 cup Lemon juice
  • 1 tbsp Agave syrup
  • 6 Basil leaves
  • 6 ice cubes
  • 1 Can club soda

Garnish

  • Basil leaves

Instructions
 

  • In a blender add the pineapple, lemon juice, agave syrup, basil leaves and blend until smooth.
  • In a short glass add 2 tbsp of the puree, 3 ice cubs and stir around. Top it with soda and garnish with fresh basil leaves.

Notes

  • You can use mango or strawberry in place of the pineapple in this recipe.
  • I have used club soda but you can use any sparkling drink you prefer including but not limited to kombucha
