The Viral Warm Cookie & Ice Cream Trend – Two Single-Serve Eggless Cookie Recipes

The viral warm cookie and ice cream trend may have made its way all over social media, but this is one trend I genuinely understand. It’s quick, comforting, ridiculously easy and, most importantly, delicious. Whether you’re craving a classic gooey chocolate chip cookie or a rich brownie batter cookie, this recipe has you covered.

You know those moments when you suddenly need something sweet? Not tomorrow. Not after you’ve gone to the supermarket. Right now. That is exactly why I love these single-serve cookies. I’ve been seeing the viral warm cookie and ice cream trend all over Instagram and TikTok, and while I don’t think the combination of a freshly baked cookie and vanilla ice cream is anything new, there is something about seeing that scoop of ice cream slowly melt over a warm, gooey cookie that makes you immediately want to make one yourself. So, naturally, I had to. But instead of making an entire batch of cookies, I wanted something a little more practical: one cookie, just for you.

No chilling an entire bowl of cookie dough. No twelve cookies sitting on the counter tempting you for the next three days. No complicated equipment. Just a few ingredients, one bowl, about 10 minutes and a warm cookie waiting to be topped with ice cream. And because I couldn’t decide between a classic chocolate chip cookie and something more intensely chocolatey, I’m giving you both.

First up is a gooey single-serve chocolate chip cookie, made with brown butter, brown sugar, yogurt and chocolate chips. Then there’s my brownie batter cookie, which is rich, fudgy and almost like a brownie and cookie had a very good day. Both are baked at 180°C for 7–9 minutes, topped with vanilla ice cream and finished with flaky sea salt. Honestly, I think the hardest part of this recipe is waiting long enough for the oven to preheat. So lets get to it.

What is the viral warm cookie and ice cream trend?

If you’ve spent any amount of time scrolling through food content recently, you’ve probably seen it. A warm, gooey cookie comes out of the oven, it is elegantly draped over generous scoops of vanilla ice cream and then comes the obligatory sprinkle of flaky sea salt. And suddenly you are questioning why you don’t have a cookie in the oven. The warm cookie and vanilla ice cream trend has become hugely popular on social media because it is one of those desserts that looks far more complicated than it actually is. There is no fancy plating involved. No elaborate decorations. No complicated pastry techniques. It’s just a really good cookie served warm with really good ice cream. And I’m very much here for that.

What makes it so good is the contrast. The cookie is warm, soft and slightly gooey, while the ice cream is cold, creamy and slowly melting over the top. Add a little flaky sea salt and you have that perfect sweet-and-salty balance. For me, the best version is one where the centre of the cookie is still slightly underbaked and fudgy. You want those crisp, golden edges but a soft middle that almost melts into the ice cream. And because I love a dessert that doesn’t require a whole afternoon in the kitchen, I’ve turned the trend into two easy single-serve cookie recipes.

Why I love these single-serve cookies?

I think what I love most about these recipes is that they don’t feel like a “small version” of a dessert. They feel complete. You get one warm, gooey cookie, a generous scoop of vanilla ice cream and a little flaky sea salt. That’s it. Sometimes that’s all you need. Also they are eggless and unlike most single serve cookie recipes these don’t need an egg yolk to make, which is perfect for anyone and everyone. You could also use a gluten free flour cup for cup measure in both the recipes to keep this gluten free. 

What cookies work best in this recipe?

Honestly, almost any cookie can be made into a warm cookie and ice cream dessert. But if you’re asking me what I would choose, give me something with golden edges, a soft centre and plenty of chocolate. A classic chocolate chip cookie is an obvious choice. The buttery dough, brown sugar and melted chocolate work so well with vanilla ice cream. And then there is the brownie batter cookie. This one is for the serious chocolate lovers. It is made with dark chocolate and cocoa powder, so it has a much deeper chocolate flavour and a fudgy texture that reminds me of the centre of a really good brownie. I’ve kept both recipes as single-serving cookies, because sometimes you don’t need a dozen cookies.

What ice cream would work best in this recipe?

Vanilla. Always vanilla. Okay, perhaps not always, but for this particular dessert, vanilla ice cream is my favourite. Check out my homemade vanilla ice cream recipe here. There is something about the simplicity of vanilla against a warm chocolate chip cookie that just works. The ice cream melts into the cookie without competing with it, and suddenly the whole thing becomes creamy, gooey and completely irresistible. If you can find a good vanilla bean ice cream, even better. You can absolutely play around with other flavours too. Salted caramel would be delicious, coffee ice cream would be amazing with the brownie batter cookie and chocolate ice cream would make this an unapologetically chocolate-heavy dessert. But if you’re making this for the first time, I’d start with vanilla. And please add the flaky sea salt. That little sprinkle might look like an optional finishing touch, but it really does make the chocolate flavour pop.

What ingredients are needed to make the cookies?

The beauty of these single-serve cookie recipes is that you don’t need a long shopping list and they are eggless hence no egg yolk needed here. For the chocolate chip cookie, you’ll need butter (brown butter adds all the difference, check out my recipe here), brown sugar, caster sugar, yogurt, flour, baking soda, chocolate chips and salt. The brown sugar gives the cookie a deeper caramel flavour, while the yogurt adds moisture and keeps the cookie soft. For the brownie batter cookie, you’ll need dark chocolate, oil, caster sugar, water, flour, cocoa powder, baking soda and salt. I like using dark chocolate and unsweetened cocoa powder here because they give the cookie a rich chocolate flavour without making it overwhelmingly sweet. These are pantry-friendly recipes, which is another reason I love having them up my sleeve for those spontaneous dessert cravings.

What equipment is needed to make the cookies?

Very little. You need, small mixing bowl, spoon or spatula, baking tray, baking paper, ice cream scoop. That’s it. No stand mixer. No electric whisk. No fancy baking equipment. Everything comes together by hand, which is exactly what I want when I’m making a cookie for one.

Pro tips on making the perfect cookies:

  • Don’t over bake the cookies – this is the most important tip I can give you. The cookies only need 7–9 minutes at 180°C. They might look slightly underbaked when you take them out, but that is a good thing. They will continue to cook slightly on the hot baking tray. Remember, we’re making a warm cookie specifically so that the centre stays soft and gooey.
  • Brown the butter – for the chocolate chip cookieIf you have an extra couple of minutes, brown your butter. It adds a gorgeous nutty, caramelised flavour that takes the cookie from simple to seriously delicious.
  • Use good chocolate – since you’re only making two brownie cookies, you want the chocolate to count.
  • Chocolate chips/chunks – use chocolate chips or chop up your favourite chocolate bar into chunks. Those little pools of melted chocolate are exactly what we’re looking for.
  • Eat it warm – this isn’t the kind of cookie I recommend baking, cooling completely and saving for tomorrow. The whole point is warm cookie + cold ice cream. Have your ice cream ready before the cookie comes out of the oven.
  • Finish with flaky sea salt – I know I’ve mentioned this several times, but it’s worth repeating. A little flaky sea salt cuts through the sweetness and makes the chocolate flavour even more intense. It also gives you that gorgeous sweet-and-salty combination that makes you want another bite.

Serving options:

The classic combination is simple, Warm cookie + vanilla ice cream + flaky sea salt. But if you’re feeling indulgent, there are plenty of ways to dress it up. Try adding, warm chocolate fudge sauce, salted caramel, peanut butter, biscoff spread, chocolate shavings, extra chocolate chips, toasted hazelnuts, crushed cookies, a drizzle of chocolate sauce, fresh berries

Storage options:

I’m going to be honest: these single serve recipes are meant for immediate consumption that, it usually doesn’t have leftovers. They are really designed to be baked and eaten. If you do want to prepare the dough ahead of time, keep it covered in the refrigerator and bake it when you’re ready. Already baked the cookie? Store it in an airtight container and warm it slightly before serving. But whatever you do, don’t add the ice cream until you’re ready to eat. The magic is in that first few minutes when the warm cookie meets the cold vanilla ice cream and everything starts melting together.

Ingredients
  

  • 2 tbsp melted butter or browned butter
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tbsp yogurt
  • 5 tbsp all purpose flour
  • 1/4 tsp baking soda
  • Pinch of salt
  • 3 tbsp chocolate chips
  • Sea salt flakes for the top

Instructions
 

  • Add the browned butter, brown sugar and white sugar into a small bowl and stir until dissolved. Add the yogurt and stir together until combined and thick.
  • Add the flour, salt, baking soda and chocolate chips. Stir until combined. Do not over mix.
  • Go preheat the oven to 180℃ at this stage. Line the baking tray with parchment paper.
  • Divide the dough into two parts and place the dough on the lined tray. They will spread so leave enough room between the cookie dough balls. Bake for 9-11 mins,
  • Let them cool down for 10 mins on a wire rack before eating.

Notes

  • Measure the ingredients well
  • Do not over mix the dough
  • I like to flip the baking tray half way through baking to ensure they are evenly baked. If they have puffed up, bang the tray on the kitchen counter a couple of times and they will deflate.

This brownie batter cookie is rich, fudgy and packed with dark chocolate chocolate flavour. It uses melted dark chocolate as well as cocoa powder, which gives it that deep chocolate taste I love. Not to mention it is eggless.

Ingredients
  

  • 2 tbsp dark chocolate melted
  • 1 tbsp oil
  • 2 tbsp + 1 tsp caster sugar
  • 1 tbsp + 1 tsp water
  • 2 tbsp flour
  • 2 tsp cocoa powder
  • tsp baking soda
  • Pinch of salt

Instructions
 

  • Preheat your oven to 180°C and line a baking tray with baking paper. Melt the dark chocolate and allow it to cool slightly.
  • In a small bowl, combine the oil, caster sugar and water and whisk well until emulsified around 2-3 minutes. Add the melted chocolate and whisk again.
  • Add the flour, cocoa powder, baking soda and salt and mix until you have a thick brownie batter.
  • Transfer the dough onto a lined baking tray and shape it into two cookies.
  • Bake for 7–9 minutes at 180°C, you want the centre to remain soft and fudgy.
  • Once it comes out of the oven, place it over scoops of vanilla ice cream and finish with a generous sprinkle of flaky sea salt.

Notes

  • Do not skip on whisking the oil sugar and water well as this forms that shiny crust on top of the cookies which resembles a brownie once baked.
  • Do not over bake the cookies, serve immediately.
