Single Serve Marble Cake (eggless recipe)

This classic tea cake is made with one batter and has two flavors, vanilla and chocolate. A simple single serve recipe that is easy to make, tender, fluffy and delicious. 

If you’ve been here long enough you would know that I have made a regular sized marble tea cake recipe on my Ninja Bake Along, years ago! I have a special relationship with marble tea cake, it is nostalgic and takes me back to my childhood. This recipe is a smaller version of that for those who do not want a full loaf, you can make this single serve recipe instead. It comes together very simply and needs very few pantry ingredients. So without any further delay let us get to it. 

What is marble cake? What is marble cake made of?

Marble cake is literally the best of both worlds, a cake which consists of vanilla cake batter and chocolate cake batter. It is swirled together giving you the most pretty looking cake once you slice it. It is a simple tea cake but a classic recipe. You can check out my regular marble tea cake recipe here. 

What are single serve recipes?

Single serve recipes are those which serve one portion. When baking this is not easy to achieve as most baked goods feed at least 6 people, things like cakes, cookies and breads aren’t commonly made for single serve options. However this recipe is a single serve, you can feed 2 but I wouldn’t share.

What ingredients do you need to make this single serve marble cake recipe?

To make the cake we need melted butter/oil, yogurt, vanilla, milk, vinegar, sugar, all purpose flour, baking soda, salt. We turn this same batter into a chocolate cake by adding unsweetened cocoa powder and milk to it. You can make this cake vegan by using oil and any plant based milk and yogurt. Also to keep this cake gluten free you can use a gluten free flour mix cup for cup measure. 

What equipment do you need to make this single serve marble cake recipe?

To make this cake we need a mixing bowl, whisk and rubber spatula. We also need another mixing bowl to divide the vanilla batter to make a chocolate batter from it. I have baked the cake in a lined 5 inch cake tin, you could use a 4 inch tin as well or a ramekin of this size. To make the marble effect we need a tooth pick or knife. It is baked in the oven. 

How to make this single serve marble cake recipe?

We start by preheating the oven to 180 ℃ and line a 5 inch tin with baking paper. In a small mixing bowl add the wet ingredients and whisk. Add the dry ingredients and whisk until smooth. Divide half the batter in another bowl, add the 1 tbsp cocoa powder and milk into the bowl. Whisk it until well combined and smooth. Pour 1 tbsp of the vanilla batter into the prepared tin alternating with 1 tbsp of the chocolate batter. Repeat until all the batter is done. Using a tooth pick or knife, swirl the batter around a couple of times. Bake the cake for 18-20 mins until golden and risen. You know the cake is ready when you poke a tooth pick into the center and it comes out clean. Cut and serve. 

Serving and storing this single serve marble tea cake?

This cake is best served once cooled. You can slice it or serve the cake whole as it is very small. It is delicious with coffee, tea or a glass of milk as well. As this cake is small in size, the chances are you will not have any leftovers but if you find yourself with leftovers you can store it in an air tight container at room temperature for 2 days or in the fridge for up to 1 week.

Ingredients
  

  • 3 tbsp melted butter/oil
  • 2 tbsp yogurt
  • 2 tsp vanilla
  • 3 tbsp milk
  • 1/4 tsp vinegar
  • 3 tbsp sugar
  • 1/4 cup flour
  • 1/4 tsp baking soda
  • 1 tbsp cocoa powder
  • 1 tbsp milk

Instructions
 

  • We start by preheating the oven to 180 ℃ and line a 5 inch tin with baking paper.
  • In a small mixing bowl add the wet ingredients and whisk. Add the dry ingredients and whisk until smooth.

  • Pour 1 tbsp of the vanilla batter into the prepared tin alternating with 1 tbsp of the chocolate batter. Repeat until all the batter is done. Using a tooth pick or knife, swirl the batter around a couple of times.
  • Bake the cake for 18-20 mins until golden and risen. You know the cake is ready when you poke a tooth pick into the center and it comes out clean. Cut and serve.

Notes

  • Do not over swirl the batter or else you will end up with one color in the cake and the marble effect will be lost.
