31 Easy Recipes For May 2026

Here are my favorite recipes that are fresh and perfect for spring or summer. They are beginner friendly recipes that are simple to make and very delicious. With a combination of sweet and savory options this list has something for everyone. 

What to cook in May? But if you know me well enough you’d know I would also tell you what to bake in May. For us May was peak summer growing up in India but in Dubai peak summer kicks in in June (Lord help us 🥵). The beauty is the freshness of produce that you see in May recipes. Currently with food prices going up we are being mindful on what we use and how much we need to be more aware of its value. However that has not stopped the stores being filled with juicy berries, tender greens, fragrant herbs and the onset of stone fruits. It is the best time to lean into freshness and vibrant recipes using colors and zesty ingredients. Before we dive into recipes you can make from my blog there are a lot of beautiful ideas all over which also inspire me during this season. Here are some of my thoughts on the seasonal recipes in May.

With greens in full swing making simple and gleaming gorgeous recipes with peas, mint, asparagus, zucchini, lettuce, avocado, cucumber, spinach and fresh herbs like dill are the best way to incorporate nutrition but fibre into your diet. Not to mention to amp up the veg intake. I have been playing around with the idea of green peas and mint soup, spinach and feta filo rolls, asparagus and cheese puff, to name a few. 

Keeping berries at the helm of this season with the onset of strawberries EVERYWHERE, blueberries, blackberries, raspberries and red currants. I have been dabbling with the idea of a strawberry basil sorbet with balsamic glaze, a classic mixed berry cobbler. I love buying frozen raspberries for my smoothies and baking but that’s only because they are more cost effective and the fresh fruit is better in garnish or salads. I saw these beautiful berry yogurt parfaits on Pinterest which have intrigued me because they look so cute! 

Looking at vegetables on the whole, you will see more of carrots, mixed peppers (PS: my mom is growing peppers in our small balcony and we call him capsi aka capsicum), eggplant, tomatoes, zucchini and fresh herbs. Now is a good time to dig into salads, soups, sandwiches to keep the meals lighter but still filling. A roasted carrot with pistachios and labneh would be yummy – I made this over easter and it was sooo good! Stuffed peppers with rice and meat or just meat and cheese, savory herb and cheese scones, garlic green beans with toasted almonds and lemon zest. 

If you are looking for more sweet ideas, look no further with jams, sauces, no churn ice creams and more desserts like galette and crumble bars which use all these delicious fruits that are in season. A simple vanilla ice cream goes well with all these fruits and accomplishments too. Don’t be fooled by desserts as you can also use fruits in your meals, like a grilled peach and burrata salad, pan fried chicken with mango and chili salsa, melon and basil soup (chilled with warm toast), apricot and lamb stew.
