This creamy, luscious, fruity and delicious strawberry no churn ice cream is perfect for summer and tastes like fresh strawberries. It is so simple to make with a few ingredients and needs no fancy equipment to bring together as well. The perfect summer dessert recipe.
Growing up ice cream for me meant either vanilla or chocolate unless we were getting it from Naturals (an ice cream parlor place in India that serves some of the best ice cream scoops ever, the flavors are so fresh and taste just like the ingredients would, all natural and nothing artificial). But this is because strawberry ice cream from the store tasted synthetic and like essence. It was not actual strawberry and the flavor just tastes gnarly.
So when I tried making homemade strawberry ice cream (obviously with out an ice cream machine because I don’t own one and it wanted to find a way to make it accessible and easy for anyone and everyone to make) it tasted like I was eating the BEST form of strawberries in a dessert as the ice cream was MIND BLOWING and tasted JUST LIKE STRAWBERRIES! So every year I make this recipe at least 3 times if not more only so I can enjoy it by the scoop as and when I like considering it freezes well for up to 2 months. Without any further delay let us get to the recipe.
Strawberry ice cream is a frozen dessert that is usually made with fresh/frozen strawberries that are pureed, cooked and churned into an ice cream base of cream, milk, eggs and sugar. It is a refreshing summer dressing that is so delicious and perfect on its own or even with a drizzle of melted chocolate. Some recipes include flavorings, essences and chunks of fruit. Its classic light pink color is also used in other desserts like Neapolitan ice cream and baked Alaska.
No-churn ice cream is a simple, creamy, homemade frozen dessert made without an ice cream machine, relying instead on a whipped mixture of sweetened condensed milk and heavy cream. It is incredibly easy to make with just a few ingredients, requiring only a hand mixer and a freezer, and produces a velvety texture without icy crystals. According food52, The sweetened condensed milk keeps the ice cream soft at low temperatures because it is low in moisture. When folded into the whipped cream, it creates a luscious, stable, and velvety texture that does not require the constant churning needed to prevent ice crystals in traditional recipes.
All you need to make no churn ice cream is a stand mixer or hand beater to whip air into the heavy cream which creates the creamy, light texture for the ice cream. It is stabilized with the condensed milk ensuring the mixture doesn’t crystalize and get solid. Another great addition to homemade no churn ice creams is vodka or vinegar or honey or cream cheese or mascarpone cream and these ingredients do not solidify rock hard once frozen and help keep the ice cream creamy, soft and luscious.
To make this recipe we need only 4 main ingredients, whipping cream, condensed milk, vinegar, frozen strawberries. I have also added a little vanilla, honey and a pinch of salt to help the ice cream overall texture and flavor. Now we need frozen strawberries so this ice cream can be prepared in little time and freezes faster too. If you use fresh strawberries the ice will take longer to firm up in the freezer.
To make the ice cream we need a stand mixer or hand beater to whip the cream until stiff peaks. A liquidizer or blender is used to puree the strawberries with part of the cream and condensed milk. The ice cream mixture is frozen in a 7 inch round tin in the freezer.
Serve it with a drizzle of melted chocolate on top, I prefer this one in a cup but you get indulgent and serve it in a cone too. The ice cream can be frozen and stored for 2 months. When ready to eat allow it to thaw a little before scooping and serving.
