This easy apple cinnamon French toast is the ultimate cozy breakfast, made with creamy vanilla custard, caramelized apples, cinnamon butter, flaked almonds and maple syrup.
I am adamant to feel cozy season vibes even though it is exceptionally hot at the moment in UAE. There are some breakfasts that feel like a proper occasion, even when they take very little effort to make. This apple cinnamon French toast with cinnamon butter is exactly that kind of breakfast. Do not be fooled by its elaborate name and appeal. It has everything I want from a cozy weekend breakfast: thick, custardy French toast, warm cinnamon apples, a generous smear of cinnamon butter, crunchy flaked almonds, a little Demerara sugar and, of course, plenty of maple syrup. The French toast itself is rich without being overly sweet. I love adding both vanilla and just a couple of drops of almond extract to the custard because it gives the toast a beautiful bakery-like aroma. Freshly grated nutmeg adds another layer of warmth, while the apples bring a little tartness and freshness to balance everything out.
And then there is the cinnamon butter. I mean… cinnamon butter on French toast should really be a thing all on its own. Softened butter mixed with brown sugar and cinnamon melts into the warm toast, creating those little pools of sweetness that make every bite feel indulgent. Add the caramelized apples, flaked almonds and maple syrup and you have a breakfast that tastes like, fall in French toast form. French toast is one of those recipes that is incredibly simple but can be made in so many different ways. I’ve got my apple pie bread and butter pudding that is also a nod to the dessert. This version is all about warm, comforting flavors. The custard is made with eggs, milk and heavy cream, giving the bread a soft, creamy center while allowing the outside to become beautifully golden when cooked. Then come the apples. I like slicing the apples rather than chopping them into small pieces so we can stuff each brad slice with it. They soften while still holding their shape, so you get tender slices of apple in every bite. Cinnamon and lemon juice are all they really need. The cinnamon butter is what takes this recipe to another level. Brown sugar gives the butter a deeper caramel flavor, while cinnamon makes the whole kitchen smell incredible as it melts over the warm French toast. Finally, I finish everything with flaked almonds for crunch, Demerara sugar for little pops of caramel-like sweetness and maple syrup for that classic French toast finish. It is simple, comforting and very much the kind of breakfast I want when I am craving something cozy.

Apples, cinnamon, nutmeg, brown sugar and maple syrup are exactly that combination. This cozy fall breakfast recipe is also a lovely way to make a regular weekend morning feel a little more special. You do not need a complicated recipe or a long list of ingredients. A few components come together to create something that feels much more elaborate than it actually is. And that is probably my favorite kind of cooking.
My Favorite Part? The best part of this recipe is that first bite. You get the soft, custardy French toast, followed by the warm cinnamon apples and that sweet, buttery cinnamon topping. Then there is the crunch from the almonds and Demerara sugar before the maple syrup ties everything together. It is warm, buttery, sweet, slightly nutty and perfectly spiced. This is the kind of breakfast I would happily make on a slow Sunday morning, especially when I have nowhere to rush off to and can actually sit down and enjoy it with a hot cup of coffee. And if you are anything like me, you will probably add just a little more maple syrup than necessary.
You only need three ingredients here: apples, cinnamon and lemon juice. I recommend using apples that have a little sweetness and some acidity. The lemon juice helps keep the flavor fresh and prevents the apples from becoming overly sweet once cooked.
This is possibly my favorite part. You need, softened butter, brown sugar, cinnamon powder. Mix them together until smooth and creamy. The result is a sweet, spiced butter that melts beautifully over the hot French toast.
I use flaked almonds and Demerara sugar. The almonds give the soft French toast a little crunch, while the Demerara sugar adds texture and a subtle caramel flavor.
Maple syrup. Always maple syrup. Whipped cream, vanilla ice cream, honey and fresh berries are also a good addition.
The bread you use can make a big difference. For the best apple cinnamon French toast, I recommend using a thick-cut bread that can absorb plenty of custard without falling apart. Brioche is one of my favorites because it is naturally rich and buttery, but thick slices of milk bread, challah or a sturdy white loaf can also work beautifully. If you have slightly stale bread, even better. Fresh bread can sometimes become too soft when soaked in custard, whereas day-old bread has a little more structure and absorbs the custard beautifully.
Absolutely. The cinnamon apples can be prepared ahead of time and stored in the refrigerator. The cinnamon butter can be prepared ahead too. Either assemble the components when ready to bake or assemble, cover with foil and place in the fridge overnight. When you are ready to make breakfast, simply bake in the preheated oven. In fact, I quite like doing this because it means the actual breakfast comes together very quickly.
I love serving this French toast with maple syrup. You could add, a dusting of icing sugar, extra toasted almonds, a little whipped cream, vanilla ice cream for an extra indulgent version, toasted pecans or walnuts, a drizzle of caramel sauce, fresh berries, a little extra cinnamon. But honestly, the combination of cinnamon butter, apples, almonds and maple syrup is hard to beat.
Yes. You can replace the heavy cream with additional milk, although the French toast will be slightly less rich and creamy.
Choose apples that hold their shape when cooked and have a good balance of sweetness and acidity. The slight tartness works particularly well with the sweet cinnamon butter and maple syrup.
Absolutely. If you do not have almond extract or prefer not to use it, simply leave it out. The vanilla and nutmeg will still give the custard plenty of flavor.
The cinnamon apples and cinnamon butter can both be made ahead. For the best texture, I recommend making the French toast fresh and assembling everything just before serving.
