Single Serve Banana Bread

This fluffy and light banana bread uses one overripe banana, a few pantry ingredients to make the tender and delicious recipe. It is a quick and easy quick bread/cake that comes together easily and is no fuss. 

This is one of my go to recipes when I am craving something comforting and if we are anything like each other there are always overripe bananas in my kitchen. The batter comes together so easily and most times I use the fork that I mash the banana with to stir the batter together. Th beauty is you can make it with a few ingredients which you most likely already have in your fridge. You can do any add ons of your choice and customize it to your liking. So let us get to it. 

What are single serve recipes?

Single serve recipes are those which serve one portion. When baking this is not easy to achieve as most baked goods feed at least 6 people, things like cakes, cookies and breads aren’t commonly made for single serve options. However this recipe is a single serve, you can feed 2 but I wouldn’t share. 

What ingredients do you need to make this single serve banana bread recipe?

To make this banana bread we need an overripe banana, egg, sugar, oil, milk, all purpose flour, baking soda, corn starch, salt. You could add cinnamon, cardamom, chocolate chips, walnuts, blueberries etc. 

What substitutes will work for this recipe?

To make this cake eggless you can use a flaxseed egg or 3 tbsp yogurt. If you want to make it gluten free we need a gluten free flour mix (cup for cup measure). If you don’t have corn starch you can use flour. 

What equipment do you need to make this single serve banana bread recipe?

To make the batter we need a mixing bowl and fork. I have used the fork to make the batter but you could use a whisk instead. The cake is baked in a 5/6 inch tin in an oven. The tin is lined with baking paper. 

How to serve this recipe and store the leftovers?

The banana bread is best served warm with a cup of coffee but it is delicious with vanilla ice cream too. You can use it with a dusting of cinnamon sugar on top too. The leftovers (if you have any leftover that is), can be stored in air tight container in the fridge for up to 1 week.  When ready to eat you can serve it fridge cold or warm it in the microwave for 10 seconds and then serve.

Equipment

  • Mixing bowl
  • Fork
  • 5 inch round tin
  • Baking paper

Ingredients
  

  • 1 large overripe banana
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp sugar
  • 1 tbsp oil
  • 1 tbsp milk
  • 1/4 cup flour + 1 tsp corn starch
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions
 

  • Preheat the oven to 180 Degrees C, line a 5/6inch round tin by brushing it with oil and adding a sheet of baking paper. Set aside.
  • In a mixing bowl add the banana and mash until it is a paste consistency, add the egg, vanilla sugar, oil, milk and using fork stir together.
  • Add the flour, corn starch, baking soda, salt and stir together.
  • Pour into the prepared tin and bake for 25-30 minutes or until a tooth pick inserted into the middle comes out clean.

Notes

  • You can add chocolate chips into the batter or blueberries as well. I love add walnuts for that additional crunch.
