Simple latte with all the gingerbread flavors of molasses, ginger powder, cinnamon powder and clove powder. Topped with whipped cream and gingerbread cookie men.
I must start out by saying I am not a fan of gingerbread spice. I don’t get the hype and honestly, it can be very heavy on the palette in my opinion. So if I am here endorsing gingerbread anything, I promise you it is worth every bit of it. This recipe is also so delicious because it is so simple. You don’t need any fancy ingredients as there are a bunch of substitutes and no fancy equipment either. This drink is perfect for the winter and has the right amount of spice.
We need milk, heavy cream, black coffee, maple syrup, molasses, gingerbread spice and vanilla. Ideally you want to top it with a gingerbread cookie (find my recipe here), more cinnamon powder and some whipped cream. Now lets talk substitutes real quick, you can use any Vegan milk and cream to make this recipe plant based. I have made this with almond milk and it was delicious. Also instead of molasses you can use golden syrup, treacle or honey. However molasses is quintessential to gingerbread.

How to make Gingerbread Spice?
There are many variations of gingerbread spice. This is my version, it might be a little mild for you if you are used to heavily spiced gingerbread but I like this recipe as it doesn’t over power the coffee and has a mild spice to it. We mix 2 tsp of ginger powder, 1 tsp cinnamon powder, 1/2 tsp clove powder. Some recipes call for nutmeg powder too.
To make the drink we start by heating the milk and until steaming. Make the black coffee or espresso as needed. Whip the heavy cream to add on top as a garnish. Once this is done we can start making the latte. In a mug add the maple syrup, molasses, ginger bread spice powder, black coffee, vanilla, cream and hot milk. Stir until combined. Garnish with whipped cream, cinnamon powder and gingerbread men cookies. Serve hot and enjoy.

Food pairings –
This latte pairs well the all the cookies from my 12 Days of Cookie Recipes. I would suggest making the gingerbread cookie recipe I have shared, recipe is linked here. You can serve this drink at breakfast and with brunch dishes. I would also recommend serving this with desserts like the No bake tahini chocolate tart and the easy bacon and eggs butter spread.
