Why I love baking even more this time of year? There is something about the “ber” months of the year that always makes me want to slow down in the kitchen. I find myself reaching for the same ingredients over and over again — cinnamon, brown sugar, vanilla, pumpkin spice, chocolate, apples, pie crust, pumpkin, coffee and anything that can be made a little warmer, a little gooier and a little more comforting. Even though I live somewhere where autumn doesn’t necessarily mean crisp leaves and chilly mornings, I still love creating that feeling through baking. For me, fall is something I can bring into my kitchen, one recipe at a time.

For me fall baking is less about making something elaborate and more about chasing those cozy, comforting flavours that make you want to curl up with a slice of cake and a cup of coffee. While I do love a recipe that keeps me pottering about the kitchen for hours I also want to make more moments chilling and relaxing with my loved ones all through the season. Think pumpkin spice, caramelised apples, maple syrup, cinnamon, nutmeg, brown butter, chocolate, toasted nuts, vanilla and plenty of warm spices. And while I absolutely love a classic pumpkin dessert, autumn baking doesn’t have to begin and end with pumpkin. My recipe archive has everything from apple pies and galettes to fudgy brownies, cinnamon rolls, loaf cakes, doughnuts and little single-serve desserts.

I think that’s why so many of my recipes naturally lean into these flavours. Some of my favourite recipes to develop are the ones that make the kitchen smell incredible while they’re baking. There is something so satisfying about pulling a cinnamon roll out of the oven, the smell of freshly baked bread, warm cinnamon in my morning oatmeal, ceiling high muffins packed with pumpkin, watching a cake rise through the oven door or cutting into a brownie while it’s still slightly warm in the middle. And, of course, there is always the moment when I tell myself I’ll just have one slice or one cookie… only to find myself back in the kitchen ten minutes later.

Over the years, I’ve also realised that my favourite autumn bakes aren’t necessarily the most complicated ones. Sometimes it’s a small-batch brownie for two, a single-serve apple crumble, a loaf cake to have with coffee or a batch of cinnamon rolls on a lazy weekend morning. These are the recipes that become part of everyday life — the ones you make when friends are coming over, when you want something sweet after dinner or simply because it’s a Sunday and you feel like baking, they truly celebrate the season. That’s what I love most about baking through this season. It doesn’t have to be perfect or elaborate. It’s about creating something that makes your home smell amazing, sharing a warm slice of cake with someone you love, or standing at the kitchen counter with a cup of coffee and eating the last piece of brownie straight from the tin. For me, those little moments are what make fall baking feel so special. 

What is in season during fall?

Fall is one of my favourite seasons to bake because the ingredients naturally lend themselves to warm, comforting desserts. Apples and pears are the obvious stars of autumn baking. They work beautifully in pies, crumbles, cakes, galettes and cinnamon-spiced desserts. Apples in particular are one of those ingredients that can turn a very simple bake into something that tastes incredibly comforting. Then there is pumpkin, which becomes synonymous with fall thanks to pumpkin pie, pumpkin spice and all those gorgeous warm spices. Pumpkin works particularly well in cakes, breads, blondies, doughnuts and creamy desserts.

Pecans, walnuts, almonds and hazelnuts also make their way into my autumn baking. I love the crunch they add to cakes and crumbles, especially when paired with brown sugar, cinnamon or maple. And then there are the flavours that aren’t necessarily seasonal ingredients but feel like autumn: cinnamon, ginger, nutmeg, cloves, cardamom, vanilla, espresso, chocolate, brown butter and maple syrup. These are the flavours I keep coming back to when I want that unmistakable cozy-season feeling. You’ll find plenty of these combinations — from pumpkin and brown butter to apple and cinnamon, maple and walnuts, coffee and chocolate, and everything in between.

If I had to sum up my autumn baking style, it would be warm, buttery, chocolatey, spiced and completely unapologetic. There is nothing authentic about my recipes but everything comforting and enjoyable. I want cakes that can be eaten with coffee in the afternoon. I want cinnamon rolls that make the entire house smell amazing. I want apples bubbling underneath golden crumble. I want pumpkin desserts with brown butter and maple. I want brownies that are so fudgy you need a fork. And sometimes, I just want a tiny single-serve cake because dessert for one is absolutely allowed.

That is what I love about baking through the seasons. You don’t need to completely reinvent what you eat — you simply start leaning into the flavours that make this particular time of year feel special. And while the classic fall flavours will always have my heart, there is plenty of room to play. Add espresso to chocolate, brown butter to pumpkin, maple to cinnamon, toasted nuts to crumble or a scoop of vanilla ice cream to basically anything warm from the oven. Because ultimately, cozy season is less about the weather and more about what comes out of the oven. So put the kettle on, preheat the oven and pick a recipe.
